Tofu. It's what's for dinner.

"I had this as a draft, for posting later, but after Veranda's last post I felt it appropriate."

In our tiny galley we are getting better at cranking out some meals. They are small meals, as there is not much room to cook, but small is good when it comes to food. A really good way to diet would be cutting back your counter space to the size of a coffee table. You would shed pounds out of sheer frustration. It takes some getting used to. Fortunately, Deb likes to clean up, and I love to cook, and keeping it small and simple really helps.

Being vegetarians, we can't just slap some animals on the grill and throw in a side. We  have to really plan a meal. We just don't nibble on some carrots, and peck at a salad, or shape tofu into turkey legs, as fun as that would be. We make some really tasty dishes, I must say.

We're not sure how the cruising life will be for vegetarians. I have this nightmare of us living off of rice and beans, and the occasional breadfruit, but I'm sure it's going to be better than that. At least I hope it will. We'll probably get labeled as the vegetarian boat before too long, and be asked to bring a salad to every party.  There may be a time when I have the occasional lobster after getting shamed by Veranda into killing bugs, and after we run out of beans and money, but for now we'll stick to the diet, and holster the spears.

Tofu Stir Fry.

They should never have named it Tofu. It just sounds stupid, like it's short for TOe FUngus, or Toe Food.  It's all in the name. Try some Tofu in a Thai restaurant sometime. I think it's pretty good.

I find the best way to cook Tofu, is to freeze it first, then thaw it, and squeeze out all the moisture like a sponge. Use extra firm Tofu, and because it's like a sponge, it will soak up flavor.  I like to cut it in long thin slabs, coat it with BBQ sauce, then bake it. You could always buy the baked Tofu, and brown it up in a pan.

Put the little sponges aside and stir fry your favorite veggies on your tiny stove top. A little sauce, add the sponges, and place it on top of some rice you managed to overcook, and you have a tasty dish.

I can do this meal in about 1/2 an hour. Deb can clean up my mess in about fifteen minutes.

No, we don't have Tofurky for the Holidays. Geezuz, no.

  1. Love the Tofurky clip! We're not sure about tofu, but thanks to you we may just have to try it sometime. =)
